  • 2 slices of bread
  • 1 lb / 450 g beef mince
  • 1 medium onion
  • bunch of parsley
  • pinch of dried savory
  • 5 eggs

  1. Soak the slices of bread in water for a minute, then drain. Brake them to pieces and mix with mince, chopped onion and parsley, savory and 1 egg, salt and pepper to taste. Let rest in the fridge for 30 mins.
  2. Preheat oven to 425° F / 220° C. Divide mince to 4 equal parts and form each into a nest (flatten ball with a hollow in the middle, big enough to hold an egg). Transfer nests to an oiled baking tray and bake for 10-15 mins.
  3. Take out of the oven, crack an egg in the middle of each nest, and put back in the oven for another 8-10 mins, until eggs are cooked, but the yolks are still slightly wobbly. Serve with salad or baked potatoes.
