Chocolate Cookies

Soft, chewy and with intense chocolate flavor, these goodies are the ultimate decadent cookies.


  • 20 oz / 565 g dark chocolate (60% cacao) or chocolate chips
  • 4 tbsp / 60 g butter (unsalted)
  • ⅔ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup brown sugar
  • 1 tsp vanilla extract

  1. Preheat the oven to 350° F / 180° C. If not using chocolate chips, chop the chocolate on chunks. Heat 8 oz / 225 g of the chocolate with the butter on low heat, stirring until melted. In another bowl, whisk together flour, baking powder, and salt.
  2. Use a mixer with the whisk attachment to beat eggs, sugar, and vanilla on high speed until light and fluffy. Reduce speed to low and beat in the melted chocolate. Gradually add the flour mixture until just combined. Stir in the remaining chocolate chips / chunks.
  3. Scoop the dough with a tablespoon and drop it on the baking sheet, leaving 2 in / 5 cm space between the cookies (so they don’t stick together during cooking). Bake until cookies are crackly but soft in the center – about 13-14 mins. Cool on baking sheets for 15 mins and transfer to a wire rack to cool completely.
