Delicious oatmeal cookies with just the right combination between crunchy and chewy. And they are really easy to make!
- 1 cup all-purpose flour
- 2½ cups rolled oats
- 1 tsp baking soda
- ¼ tsp salt
- 1 cup / 230 g butter
- ½ cup brown sugar
- ½ cup white sugar
- 2 tbsp maple syrup
- 1 egg
- 1 tbsp milk
- 3 cups semi-sweet chocolate chips
- 2 cups chopped walnuts
- Have all ingredients at room temperature. Preheat oven to 300° F / 150° C. Combine well flour, oats, baking soda and salt in a bowl.
- In an electric mixer, fitted with the paddle attachment, combine butter, sugars and maple syrup on low speed. Scrape down sides of bowl, add egg and milk. Beat on medium speed, until well combined.
- On low speed, gradually add flour mixture, chocolate chips and walnuts. Mix just until combined. Cover with plastic wrap and chill for 30 mins.
- Line baking sheets with parchment paper. With a teaspoon, scoop out mounds of cookie dough, place on baking sheet and flatten a bit with the back of the spoon. Leave 2 ” / 5 cm space between cookies. Bake for 18-20 mins, until light golden but still soft. Let stand for 2-3 mins to firm up and transfer to a wire rack to cool completely.
