Say the sweetest “I love you” with these fudgey, cakey, and at the same time crispy brownies.


  • 1 tbsp cocoa
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • 3 oz / 85 g butter
  • ½ lb / 225 g dark chocolate
  • 1 cup sugar
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 3 large eggs, room temperature
  • ½ cup walnuts

  1. Preheat oven to 350° F / 180° C. Butter 12 muffin cups and dust with cocoa, tap out the excess. Sift flour with baking powder.
  2. In a double-boiler, melt the butter, chocolate, sugar and vanilla, until completely melted. Transfer to a stand mixer, fitted with paddle attachment, and mix on low for a minute. Add the eggs, one at a time, beating after each until incorporated and shiny. Add the flour mixture and beat just until combined. Beat another minute on medium, until mixture is shiny.
  3. Divide mixture between prepared cups. Sprinkle the chopped walnuts on top and press slightly into the batter. Bake for 15-20 mins, until tester inserted in the center comes out clean. Transfer to wire racks to cool.
