Try this simple and delicious Spanish dish – classic paella with chicken and seafood.
- 8 tbsp olive oil
- 7 oz / 200 g chicken breast
- 3.5 oz / 100 g calamari
- 3.5 oz / 100 g shrimps
- 2 peppers
- 3.5 oz / 100 g green beans
- 3.5 oz / 100 g peas
- 1 onion
- 3 garlic cloves
- 2 tomatoes
- 1 cup long-grain rice
- 3 cups vegetable stock
- pinch of saffron
- Cut chicken into bite-size pieces. Clean calamari and shrimps (leave the heads on), slice calamari into thin rings. Cut peppers into strips, dice onion and tomatoes, mince garlic.
- In a heavy skillet, heat 2 tbsp oil over medium-high and fry chicken until golden brown. Take out, add 2 more tbsp oil to the skillet, and cook calamari and shrimps until light golden. Take out, add 2 more tbsp oil, and repeat with green beans and peas, remove from skillet.
- Add the remaining oil and fry onions and garlic until soft and brown on the edges. Add tomatoes and cook for 2-3 mins. Add rice and cook for a minute, while stirring. Pour vegetable stock, return chicken, calamari and shrimps to the skillet. Season with salt, pepper and a pinch of saffron. Stir, cover, and cook, until rice softens and absorbs the stock. Add the vegetables and cook for another 2-3 mins. Serve in the skillet.
