Simple tuna sandwich recipe with just few ingredients. It’s perfect for quick lunch or picnic snack.
- 8 oz / 225 g canned tuna in oil
- 1 big red onion
- bunch of sun-dried tomatoes in oil
- juice of 1 lemon
- 8 tbsp black olive pesto
- 8 slices sandwich bread
- Combine tuna, diced onion, drained and chopped tomatoes, lemon juice, and mix with a fork.
- Spread each slice of bread with 1 tbsp olive pesto. Spread the tuna mixture in an even layer over half of the slices. Cover with the remaining slices.
- Slice the sandwich diagonally and serve paired with green salad.
