Vanilla-Butter Cookies

Crispy outside and creamy inside, these cookies melt in the mouth. They make a great Christmas giveaway.


  • 2 sticks / 225 g butter, room temperature
  • 3.5 oz / 100 g confectioners sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 11 oz / 320 g all-purpose flour
  • sanding sugar for sprinkling

  1. Preheat oven to 350° F / 180° C. In a mixer, fitted with the paddle attachment, cream butter until light and fluffy. Add sugar, vanilla and salt, and beat until combined. Gradually add flour and beat until mixed, scraping down the bowl sides if needed. Divide dough into 4 balls and put them in the fridge for 15 mins.
  2. Roll out each dough ball on a floured surface to ⅛” / ¼ cm thickness. Cut out cookies, using any shape you like. Transfer to a baking sheet, lined with parchment paper, and dust with sanding sugar on top. Repeat with remaining dough, refrigerating it for few minutes if it gets too soft to work with. Put baking sheets with cookies in the fridge for 10 mins before putting in the oven. Bake for 10 mins, until golden brown on the edges.
