Tasty and fast wholemeal bread. Best eaten right away! 🙂

  • 2 cups all-purpose flour
  • 2 cups whole-wheat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tbsp / 30 g butter
  • 1¼ cups buttermilk

  1. Preheat oven to 400° F/ 200° C. Sift together flours, baking soda and salt. Rub the butter into the flour with your fingers, until crumbly. Make a well in the center and pour the buttermilk. Stir in the flour with a wooden spoon, until soft crumbly dough is formed.
  2. Turn the dough out on a floured surface and knead lightly until smooth, about 3 mins. Shape into a round and flatten (should be around 6″ / 15 cm in diameter). Cut an “x” across the top, 1″ / 2 cm deep.
  3. Bake in the preheated oven for about 35 mins, until hollow sounding when tapped underneath. Cover with a towel and cool on a wire rack.
