Mini Cheddar Biscuits

Flaky and spicy bites, perfect for snacking or alongside a bowl of soup.


  • ½ cup / 1 stick / 113 g butter
  • 2 cups grated cheddar
  • 1½ cups all-purpose flour
  • 1 tsp salt
  • ¼ tsp cayenne pepper
  • ¼ tsp paprika
  • 2 tbsp heavy cream

  1. Put all ingredients except cream in a food processor and pulse until mixture resembles coarse crumbs. Add cream and pulse until just combined. Divide dough into 4 pieces. Shape each piece into a rectangle, wrap in plastic, and refrigerate for 30 mins, until firm.
  2. Preheat oven to 325° F / 160° C. Roll out each rectangle on a lightly floured surface to a ⅛” / ¼ cm thickness. Cut it into 1″ / 2.5 cm squares. Transfer to a baking sheet, lined with baking paper, leaving ¼” / ½ cm space between each biscuit. Refrigerate for 20 mins, until firm. Bake for 15 mins, until light golden.
