Mushrooms are one of my favorite pizza ingredients. Try this easy mushroom and cheese pizza tonight, and you’ll see what i mean 🙂
- 6 oz / 170 g fresh cremini mushrooms
- 3 tbsp olive oil
- 1 garlic clove
- 1 lb / 450 g pizza dough
- 5 oz / 150 g shredded mozzarella
- 1 oz / 30 g grated Parmesan
- 2 cups baby arugula
- Preheat oven to 450° F / 230° C. Wash, dry and slice the mushrooms. Heat 2 tbsp olive oil in a pan over medium-high heat. Mince garlic and add it to pan, cooking until golden on the edges. Add mushrooms and cook, until all water evaporates.
- Oil a baking sheet. Roll out the dough to a large oval, as large as the baking sheet, and transfer it to sheet. Spread 1 tbsp olive oil on top of it. Spread the cooked mushrooms and sprinkle with mozzarella and Parmesan. Season with salt and pepper.
- Bake for 15 mins, until cheese is golden and bubbling. Top with washed and dried arugula, and serve.
