Mushroom Pizza with Arugula

Mushrooms are one of my favorite pizza ingredients. Try this easy mushroom and cheese pizza tonight, and you’ll see what i mean 🙂

  • 6 oz / 170 g fresh cremini mushrooms
  • 3 tbsp olive oil
  • 1 garlic clove
  • 1 lb / 450 g pizza dough
  • 5 oz / 150 g shredded mozzarella
  • 1 oz / 30 g grated Parmesan
  • 2 cups baby arugula

  1. Preheat oven to 450° F / 230° C. Wash, dry and slice the mushrooms. Heat 2 tbsp olive oil in a pan over medium-high heat. Mince garlic and add it to pan, cooking until golden on the edges. Add mushrooms and cook, until all water evaporates.
  2. Oil a baking sheet. Roll out the dough to a large oval, as large as the baking sheet, and transfer it to sheet. Spread 1 tbsp olive oil on top of it. Spread the cooked mushrooms and sprinkle with mozzarella and Parmesan. Season with salt and pepper.
  3. Bake for 15 mins, until cheese is golden and bubbling. Top with washed and dried arugula, and serve.
